Tuscan White Beans

Ingredients
2 15.5-ounce cans cannellini beans, drained and rinsed
2 to 3 tablespoons olive oil
1 large fennel, chopped
2 large carrot, peeled and chopped
2 cloves garlic, minced
1/2 cup low sodium chicken broth
1.5 teaspoons fresh rosemary, minced
1.5 teaspoons fresh sage, minced
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup Parmigiano Reggiano, grated

Preparation
Cooking Time: 25 min.

1. Heat olive oil in Dutch oven over medium-high heat.
2. Add carrot and fennel.
3. Cook for 8-10 minutes, or until softened.
4. Add garlic and cook a minute longer.
5. Add beans, broth, herbs and spices.
6. Reduce heat to simmer and stir occassionally for 12-15 minutes, until creamy.
7. Stir in Parmigiano and serve.
