Spinach and Mushroom Salad

Ingredients
2 cups button mushrooms, sliced
1/2 tablespoon lemon juice
11 ounces spinach, stems removed
1/4 cup pine nuts
3 tablespoons olive oil
1/2 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper

Preparation
1. Toss mushrooms and first quantity of lemon juice in a bowl.
2. Add spinach and pine nuts.
3. Combine olive oil, second quantity of lemon juice, salt and pepper.
4. Pour over vegetables.
5. Toss and serve.
