Warm French Lentils

Ingredients 2 tablespoons olive oil 1 leek, sliced 2 carrots, diced 1 teaspoon garlic, minced 1 cup French green lentils 1 whole onion 6 whole cloves 1 white turnip, cut in half 1 teaspoon unsalted butter 4 teaspoons dijon mustard 2 tablespoons red wine vinegar 1 tablespoon salt 1 teaspoon black pepper
Preparation 1. Heat oil in saute pan. 2. Add leek and carrots, cooking over medium-high heat for 5 minutes. 3. Add garlic and cook another minute. 4. Set aside. 5. Bring lentils, 4 cups water, onion stuck with cloves and turnip to a boil. 6. Reduce heat and add leek and carrots. Simmer 20 minutes. 7. Remove onion and turnip. 8. Strain lentils and place in another bowl. 9. Add butter. 10. Whisk 1/4 cup olive oil, mustard, vinegar, salt and pepper. 11. Add to lentils and mix well.
