Tandoori-Style Tilapia & Red Quinoa

Ingredients
12 ounces tilapia fillets
2/3 cup Greek yogurt
1 teaspoon fresh chopped garlic
1 teaspoon fresh grated ginger
1/2 teaspoon curry powder
1/2 teaspoon nutmeg
1/2 tsp cumin
3/4 cup red quinoa
1.5 cups low-sodium chicken broth

Preparation
1. Preheat oven to 400 F.
2. Mix the yogurt, garlic, ginger, 1/2 teaspoon curry, nutmeg and cumin in small bowl.
3. Completely coat the tilapia in yogurt mixture and place in a baking dish.
4. Bake for 10-15 minutes or until flaky.
5. Bring quinoa, broth and 1/8 teaspoon to boil.
6. Reduce to simmer and cover for 15 minutes.
7. Serve tilapia over quinoa.
