Stuffed Bell Peppers

Ingredients
2 red bell peppers, stems and cores removed
1/2 cup dry red quinoa
1 cup or more, low-sodium chicken broth
1/4 teaspoon curry powder
1 carrot, peeled and finely diced
1 cup fresh spinach, chopped
2-3 tablespoons crumbled feta cheese

Preparation
Preheat oven to 350 F.

1. Place quinoa, broth and curry powder in pot. Bring to boil.
2. Reduce to a simmer, cover and cook for 10-15 minutes until all liquid is absorbed.
3. In a medium bowl, combine carrots, spinach, feta and cooked quinoa.
4. Stuff bell peppers with the quinoa mixture.
5. Place bell peppers standing up in baking dish. Barely cover bottom of dish with broth.
6. Bake for 30 minutes, or until pepper is soft.
