My Mac Muffin

Ingredients 1 whole grain English muffin 1 egg or the equivalent Egg Beaters 1-2 tablespoon finely chopped veggies 1 slice cheddar cheese 1 soy breakfast sausage pattie cooking spray
Preparation 1. Toast a whole grain muffin. 2. While toasting, whisk egg in a greased mug, then mix in veggies. 3. Cook egg in mug on high in your microwave for 1-2 minutes. 4. At the same time, microwave your soy sausage. 5. Put cooked egg on bottom of toasted muffin. 6. Add soy sausage and cheese slice on top and cover with the top of the toasted muffin.
