Hearty Healthy Pasta Fazool Soup

Ingredients
1 tablespoon olive oil
1 teaspoon tomato paste (low sodium)
2 anchovy fillets
1 quart chicken or vegetable broth (low sodium/99% fat-free variety)
3/4 cup dry tortellini
1: 15-ounce can white beans, drained/rinsed
1 cup packed baby spinach, roughly chopped
1 cup arugula, roughly chopped
Sea salt and fresh ground black pepper to taste
A pinch of red pepper flakes
Optional: a tiny sprinkle of Parmesan cheese

Preparation
1. Preheat a large saucepan on medium heat.
2. Drizzle olive oil on the saucepan. Then add anchovies fillets
    and tomato paste. Stir and combine for 2-3 minutes.
3. Add the chicken (or vegetable) stock to the saucepan.
    Turn heat to HIGH and bring stock to a rolling boil.
4. Add the tortellini (it will need to cook for about 10 minutes).
4. In the meantime, rinse/drain and add in the can of white beans
    to the stock.
5. Add a pinch of crushed red pepper flakes and sea salt/pepper
    to taste.
6. After tortellini has finished cooking, add in spinach and arugula
    to the stock and stir til they are wilted (30 seconds).
7. Turn off heat. Ladle soup into bowls, top with a small sprinkle
    of Parmesan cheese (optional) and ENJOY!
