Submitted by Michelle A., Hanscom

Ingredients
1 cup water
1 cup unsweetened apple juice
1/4 cup agave nectar or dark honey
2 tablespoons orange juice
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch of cloves
2 tablespoons grated orange peel
4 firm, ripe pears
2 tablespoons lemon juice
Fresh mint leaves

Preparation
1. In a 3-quart saucepan over medium heat, combine the water, apple juice,
nectar, orange juice, vanilla extract, cinnamon, cloves and 1 tablespoon
    of the orange peel.
2. Bring to a boil.
3. While the poaching liquid is coming to a boil, peel, halve and core the pears
and immediately coat them in lemon juice. Reduce the poaching liquid to a
simmer, add the pears, cover, and simmer for 2 minutes.
4. Remove the pears from the heat and allow them to cool in the juices.
5. Remove the pears from the pan.
6. Heat the juice to reduce it by half.
7. Strain it and pour it over the pears.
8. Garnish with the remaining orange peel and fresh mint and enjoy hot or cold.
