Rosemary Pork Tenderloin

Ingredients 1/3 cup panko 1 teaspoon fresh rosemary (minced or ground) 1 tablespoon dijon mustard 1-1.5 pound pork tenderloin (at room temperature)
Preparation 1. Preheat oven to 450. 2. Mix the bread crumbs and rosemary on a plate or in a shallow bowl. 3. Pat the pork dry and season with salt and pepper. 4. Slather pork with dijon mustard. 5. Dredge the pork through the panko mixture. 6. Make sure to evenly coat the pork, pressing the panko into it. 7. Place pork on a rimmed baking sheet (on foil or coated with cooking spray) and roast for 30-35 minutes, until internal temperature is 130/135 (for medium). 8. Remove pork from oven and let rest for 10 minutes. During this time the pork's temperature should continue to rise about 10 more degrees.
