Mini Eggplant Pizzas

Ingredients 4 Asian eggplants, skinned and sliced 1/3 inch thick 2 egg whites in a cup Cooking spray 1 cup spaghetti sauce 1 cup low-fat mozzarella, shredded 1 cup Panko (Japanese breadcrumbs) 1/2 teaspoon garlic salt 1 tablespoon parmesan cheese
Preparation 1. In a bowl combine Panko, garlic salt and parmesan cheese. 2. Dip eggplant pieces one at a time into egg white and then into Panko mixture to coat. 3. Spray cooking sheet where coated eggplant will bake. 4. Lay coated eggplant onto cooking sheet. 5. Bake eggplant slices alone for 35 minutes at 350 degrees. Turn once. Eggplant should feel tender when done. 6. Take out of oven and spread 1/2 tablespoon sauce on eggplant, then sprinkle with mozzarella cheese. 7. Return tray to oven until cheese is melted and sauce is warm.
