Lebanese Tabouleh with Spinach and Cucumber

Ingredients
1/2 cup dry bulgur (preparatoin: add one part bulgur to
      3 parts boiling water. Let soak for 1-2 hours)
2 tomatoes, diced
1/4 cup red onion, finely chopped
1/2 a cucumber, diced
1/2 cup spinach, coarsely chopped
1/2 cup parsley, finely chopped
2 tablespoons fresh mint, finely chopped
Juice of 1 lemon
2 tablespoons olive oil
A good sized pinch of sea salt

Preparation
1. Prepare bulgur by adding one part bulgur to 3 parts boiling water.
    Let soak for 1-2 hours.
2. When bulgur is prepared, combine all ingredients and let sit for
    30 minutes to an hour before eating.
3. Enjoy!
