Grilled Chicken & Pineapple Salsa

Ingredients 2 chicken breasts Steak seasoning 1: 8-ounce can of crushed pineapple, drained 1: 10-ounce can of Rotel with chilis; drained 1: 15-ounce can of corn, drained 1/2 cup chunky salsa 1/2 cup rice 1 cup low sodium chicken stock
Preparation 1. Cook rice according to directions, using chicken stock in place of water. 2. Mix corn, Rotel, salsa and pineapple. Refrigerate till ready to serve 3. Sprinkle chicken with steak seasoning and grill. Once the chicken is done, let sit for a few minutes before slicing it. 4. Create a bed of rice on your plate, then add salsa, followed by a sliced chicken breast.
