Baked Banana Lumpia

Ingredients
10 small local bananas split lengthwise OR 3 large bananas split in sixths
20 lumpia wrappers (found near the wonton/eggroll wrappers in the frozen section)
1-2 tablespoons sugar substitute
Butter substitute in spray bottle
1-2 egg whites
Fat-free whipped cream

Preparation
1. Take one banana slice and lay it lengthwise at the tip of a lumpia wrapper,
    pointing at you.
2. Spray 1-2 spritzes of butter spray on the rest of the wrapper.
3. Sprinkle wrapper with a pinch of sugar substitute.
4. Roll the wrapper around banana starting with banana end, folding in the left and
    right corners and finishing the wrap straight to the end.
5. Use a little water to seal the end of the wrapping.
6. Put the wrapped end down on a baking sheet.
7. Brush the tops of the lumpia with egg white before baking.
8. Bake lumpia for 25-30 minutes at 325 degrees. Watch for browning of the tops.
    Don't let them burn. Do not cover in the oven or after they come out.
9. Serve with fat-free whipped cream.
