Sausage and Potatoes

Ingredients
1 package smoked turkey sausage (sliced)
1 tablespoon olive oil
1 green bell pepper (diced)
1 small onion (diced)
2 zucchinis (sliced)
3 medium potatoes (boiled and diced)
Pepper
Garlic powder
Thyme
Light sour cream (optional)

Preparation
Prep time: 10 minutes
Cooking Time: 20-25 minutes
Temp: Medium and low heat over stove

1. Boil potatoes. You want them firm, not too soft. Peel
    and dice them into 1-inch squares that are half an inch
    thick. Set aside.
2. In a large pan or two-quart pot, heat oil over medium
    heat for about 1 minute.
3. Slice turkey smoked sausage about quarter of an inch
    thick and add to oil.  Cook for about 5 minutes stirring
    frequently.
3. Add peppers, onions and zucchini to sausage and
    reduce heat. Cover for 10 to 15 minutes or until veggies
    are tender.
4. Add potatoes and cover again for about 2 minutes.
5. Season to taste with pepper, garlic powder and thyme.
6. Serve and enjoy. Add sour cream for added flavor.
