Halibut Delight

Ingredients
1 clove garlic, minced or pressed
2 tablespoons olive oil, divided
1/2 cup dry white wine
3 tablespoons lemon juice
2 tablespoons drained capers
1.52 pounds halibut fillets, 3/4 to 1 inch thick
Salt and pepper
1/2 cup shredded Parmesan cheese

Preparation
1. In a frying pan over medium-high heat, combine garlic
    with 1/2 tablespoon of the oil. Stir often until limp but
    not browned, about 2 minutes.
2. Add wine, lemon juice, and capers.
3. Boil, uncovered, until reduced to 1/2 cup, 3 to 4 minutes;
    keep sauce warm.
4. Preheat oven broiler. Rinse halibut, pat dry and cut into
    four to six equal portions.
5. Rub fish with remaining oil, sprinkle with salt and pepper
    to taste and arrange in a single layer in a 12- by 17-inch
    broiler pan (without rack).
6. Broil halibut 3 to 4 inches from heat for 3 minutes.
7. Using a spatula, gently turn fish over, sprinkle with
    cheese and broil (cut to test) about 3 more minutes.
8. Transfer fish to a platter or individual plates and top
    with sauce.
