Fish & Vegetable Tagine

Ingredients
3/4 teaspoon cumin
3 tablespoons extra virgin olive oil
15 ounces stewed tomatoes chopped
2 tablespoons capers, drained
2 small carrots, thinly sliced
2-3 cups collard greens (or any other hearty green), chopped
1/2 teaspoon cinnamon
20 ounces tilapia (or other white fish filet)

Preparation
Prep Time: 10 minutes
Cooking Time: 25 minutes

1. Heat oil in large skillet over medium heat.
2. Add cumin and cook until fragrant, about 1 minute.
3. Stir in tomatoes, capers, cinnamon, and salt and
    pepper (to taste). Mix well.
4. Add carrots and greens. Cook until thickened and
    greens are wilted, about 15 minutes.
5. Pat fish dry and salt and pepper (to taste).
6. Add fish to the skillet and cover. Cook until fish is
    cooked through, about 7-10 minutes.

Characteristics
Ready in under 30 minutes
